This hearty breakfast will provide plenty of protein for everyone. If you have an open-minded omnivore, you won’t need the eggs, as the Tofu Scramble is delicious! The turmeric gives it the color of eggs.

I looked for a vegan pancake recipe, but couldn’t find one. So I made one up! These spiced Applesauce Pancakes are awesome. Pour real maple syrup on them, or serve with your favorite preserves.

LV Sour cream without gelatin

V Dijon Mustard Vinaigrette salad dressing
I made the Corn Fritters and Black Beans one night with what I had available in my pantry. Mmmmmm! It has been a staple ever since. Combine it with link sausage and a green salad for a satisfying lunch for anyone.
 
C Boiled or grilled shrimp
V Thai Salad
I had this salad in a Thai restaurant and begged for the dressing recipe. It had three ingredients! I immediately went home and re-created it. Serve it with tofu for your vegetarian. Put shrimp or ultra thin slices of beef on it for your meat-eaters.
 
 
O Lasagna

If you want to speed up this meal, make only the lasagna (with hamburger replacer) or the very tasty Stuffed Shells. If your meat-eaters insist, make the lasagna with real meat. The eggless Caesar Salad and garlic bread will round this out for a very hearty meal.

These Spinach Enchiladas are so easy and so good! Be sure to put the chicken enchiladas in a separate pan. Sprinkle the Spinach Enchiladas with paprika or some other identifying spice or herb to avoid confusion.
