Mini Chimichurri Burgers

Ingredients

Burgers
2 lbs. of ground round
1 egg
1 tsp cumin
1 tsp all season salt
1 tsp chili powder
1 cup chopped onion
¼ cup chopped cilantro
Fresh squeeze of lemon or lime

Toppings
1 cut equal parts mayo and ketchup
1-2 avocado, thinly sliced, long way
1 head of cabbage, finely shredded
1 tomato, sliced
1 package of queso cotija or Mexican cheese

Buns
1 package of rolls

Directions

Set aside buns or bread
Mix beef, egg, cumin, salt, chili powder, onion, cilantro and lime juice
Take a ¼ cup size of beef in hands and shape burgers
Cook them over grill or on stove top

On mini buns, spread mayo and ketchup mixture.

The cabbage needs to be soft. Bring a pot of water to a boil, turn off fire and add shredded cabbage for about five minutes. Strain water.

To begin layering add cooked burger to bun.
Add avocado, tomato, cabbage and cheese. Add the top bun and get ready for a delicious burger.
